Bibingka is a Filipino coconut rice cake, traditionally baked in banana leaves until the edges char and the sugars toast. This cookie is my love letter to it: toasted rice flour, coconut shreds, butter and virgin coconut oil with pandan extract for that familiar banana leaf oil aroma.

Full ingredient details coming soon. Everything is baked in a home kitchen that also handles wheat, dairy, egg, sesame, coconut, and tree nuts, so cross-contact is always possible.
